Restaurant Fine Fleur

Fine Fleur is my new restaurant in Antwerp. It’s located in the most luxurious hotel of the Benelux and opened it’s doors halfway through 2021. In this unique fine-dining restaurant we strive for perfection up to the smallest of details. Nature is leading to bring out the tastes of the ingredients in their purest form. In addition, products of our own soil and surroundings play an important role in the kitchen of Fine Fleur.

The White Room

The White Room, the oldest restaurant in Amsterdam, is the first restaurant I don’t own, but to which I was allowed to connect my name and set out my vision. The concept of The White Room since 2015 has been a reflection of de Leest and is characterised by my own style of fresh and sour elements. As signature chef, I have the final responsibility. In 2017, our team was awarded a Michelin star.

Restaurant Voltaire

Since 2017, I have been a Culinary Advisor at Parc Broekhuizen in Leersum. Here, the focus is on Restaurant Voltaire, which under my leadership received a Michelin star in 2018. In order to give Parc Broekhuizen a greater energetic charge and prominence, I’ m also responsible for creating national and international events, among which is Chefs at the Parc.

Restaurant SmaaK

Similar to The White Room in Amsterdam, my name and vision are also connected to Restaurant Smaak which is located in Tokyo, Yokohama. This brand-new restaurant will open soon and is located on the 46th floor of a skyscraper. It will feature Japanese cuisine intertwined with my style of fresh and sour elements.
